Fried Okra / Jerry / Shin Bo Ra / 201012078

Ingredients

10 pods okra, sliced in bite-size pieces
1 egg, beaten
150g (5 oz) polenta
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
100ml (4 fl oz) vegetable oil

Method

1. In a small bowl, soak okra in egg for 5 to 10 minutes.
2. In a medium bowl, combine polenta, salt and pepper.
3. Heat oil in a large frying pan over medium-high heat.
4. Dredge okra in the polenta mixture, coating evenly.
5. Carefully place okra in hot oil; stir continuously.
6. Reduce heat to medium when okra first starts to brown, and cook until golden.
7. Drain on kitchen roll.
8. Finished
